There are always choices. Here you can buy part of a cow and get your share of unprocessed milk products delivered. Or get a weekly box of organic vegetables for less than supermarket prices. Big food and big retail are not the answer. Knowing your producer directly is. Your usual craving is not available through these channels? Eat less today. Supermarkets are convenient but criminal enterprises.

A big country with a range of dwellings. I have long advocated for food growing in urban gardens. Getting rid of the lawn. Some buildings could host micro gardens on their roof. San Francisco is lucky. The City really does support the interest. Not perhaps in an ideal sense but it is done in collaboration with neighborhoods.

Most cheese in the USA is made with GMO rennet (Pfizer!) that also is known to disrupt digestion in the gut. Look for organic cheese to avoid this. https://organicconsumers.org/genetically-modified-ingredients-in-most-us-cheeses/

I am cheerful that the dunces win. Synthetic cheese for all! GMO cows and chickens. I will but oxygen and become a breatharian.
